Seriously, I am nearly ready to go here. I am perfecting my holiday recipes and will post them as I go. Ute, I haven't forgotten your porcini mushroom flans. They're coming I promise.
Flan of porcini mushrooms
200g of porcini purée. (Rehydrate mushrooms first, then cook with olive oil, garlic and parsley, salt and pepper and some stock or water, then blend)
200g cream
2 egg yolks
1 egg
30g Parmesan
Sprinkling of nutmeg, salt and pepper
1. Make purée first.
2. Grease muffin tins or equivalent disposable foil tins.
3. Whisk all ingredients together and add mushroom purée. Can use blender, mixer,etc.
4. Fill cups and bake in a water bath in oven at 180 for approximately 20 minutes until set. Serve immediately.
5. Mixture will keep in the fridge for a day.
NB. This recipe is the intellectual property of Guiseppe at Camiano Piccolo. Apologies that I haven't made this myself yet, it's just that I promised this recipe to Ute a while ago and I know she will be reading it. Perhaps she will test it and provide feedback? It is possible that there could be discrepancies due to translation from Italian to English. I have, however eaten it, and it is perfect! Enjoy.
